Tozzetti with Almonds

Tozzetti alle Mandorle

Description

Probably dating to the sixteenth century, “Tozzetti” are officially consecrated by the Academia Della Crusca in 1691 giving the following definition: “biscuit slices, of fine flour, sugar and egg white.” Name seems to derive by “singing”, part of a set, or “cantellesi” in Latin piece or slice of bread.  At the beginning, there is a form of a loaf (like bread) that, after the first cook, is cut into slices.  These are then put in the oven for roasting dots giving the typical crispy and tasty. Excellent enjoyed on their own or with the Vin Santo (wine), have always been synonymous of friendliness and hospitality.
